Here is the recipe for it:

Pickled Beets
1 lb beets - whole and skin on
1 L apple juice
250 ml red wine vinegar
150 g sugar

1.      Steam beets whole and skin on for about 30 minutes (depending on
size), or until there is no resistance when pierced with a paring knife.
2.      Wearing gloves, peel off skin while they are still warm and trim
the ends off.
3.      Using a mandolin or sharp knive, thinly slice beets into 1/8&quot;
round slices.
4.      Combine apple juice, red wine vinegar and sugar in a pot and
bring to a boil until the sugar has dissolved.
5.      Pour pickling liquid over beets and allow to cool slightly.
6.      Allow beets to sit in pickling liquid for at least 12 hours
before use. Store in refrigerator.

How many will by end of the year? How many trees are cut down to supply your paper rolls? Hmmm...sustaina-what now?
