Chefs from our restaurants in Calgary (Stephen Avenue, Macleod Trail, and Barlow Trail) will be serving samples of signature Cactus dishes at this year’s festival. Tuna Stack: certified Ocean Wise™ albacore tuna, citrus tamari vinaigrette, nori, sesame, avocado, micro cilantro, wonton chips.
Butternut Squash Ravioli with Prawns: butternut squash and mascarpone ravioli, truffle butter, sautéed jumbo prawns, pine nuts, crispy sage.
Caramel Chocolate Mousse: warm caramel foam, crunchy sponge toffee, velvety chocolate mousse.
